All the New Mexico type chiles. Many people are looking for "Hatch" chile or "Hatch" pepper. There is no such variety. "Hatch chile" refers to the many NuMex varieties grown near Hatch, New Mexico. According to New Mexico law, if it is not grown there, it can't be called "Hatch Chile."
